Santa Hat Cupcakes

December is finally here and Christmas is around the corner. While browsing my stumble upon account, I found this recipe for santa hat brownies and thought it might be cool to try Santa Hat cupcakes! They will be a great addition to your next christmas party or family get together. It is a fun and cute idea to make and it does not require a lot of baking skills. You will need:
24 of your favorite cupcakes, cooled and ready to decorate
16-18 small strawberries, cleaned and hulled
vanilla-mascarpone butter cream (recipe below)
Vanilla Mascarpone Butter cream:
Ingredients:
1/2 cup (1 stick) unsalted butter, room temperature
8 ounces mascarpone cheese, room temperature
2-1/2 to 3 cups powdered sugar
2 teaspoons vanilla extract
pinch of salt
Directions:
- Beat butter and mascarpone cheese until light and creamy, about 2 minutes.(use either a stand mixer or hand mixer)
- Add vanilla extract and salt.
- Add 2-1/2 cups of sugar, half a cup at a time and continue beating until smooth.
- Add more sugar, if needed to reach desired consistency and sweetness.
Santa Hat Cupcakes
- Spread a ring of vanilla butter cream on top of each cupcake.
- Cut off the base of a strawberry so it is flat and place it upside down on each cupcake, pushing slightly to secure in place.
- Top the tip of the strawberry with a dot of butter cream to finish the Santa hat.
